Orange and Pistachio Cake

With Mother's Day on Sunday, we invited my mum over for dinner and as it was a special occassion, I felt the need to make a special cake.

My eyes roamed the cooking books and the inter-ma-net until I found the perfect cake. Orange and Pistachio Cake.

For a first attempt, it turned out pretty well even though I absently mindedly put all the pistachios in the food processor so when I poured the syrup over the top of the cake it looked a bit like it had sprouted algae. Still, it tasted awesome.
